Cool treats to beat the heat! After impulse purchasing a $2 popsicle mold, I had no excuses not to experiment with some homemade popsicle recipes, especially after a hot Sunday trapped in my Silverlake apartment. With an extra refreshing herbal boost from fresh mint, these DIY pops are a healthy and super simple treat to have on hand for those hot summer days ahead; the hardest part is waiting for them to freeze.
Blackberry Mint Popsicles
Ingredients:
3/4 cup fresh blackberries
1 cup plain yogurt
1 tbs sugar
3 mint leaves
*Also will need a popsicle mold. This one is from Ikea.
Method:
Puree blackberries and sugar in blender for 5-10 seconds.
Chop and add mint leaves to blackberry puree. Blend for an additional 3 seconds.
Now the fun part – making layers! Alternate adding a spoonful of yogurt and blackberry mixture to popsicle mold, starting with the yogurt (aim to have 4-5 layers total). Give the popsicle stick a little swirl to blend the layers and create a swirl effect.
Freeze for 4 hours or overnight. (Don’t cheat and break into them earlier than that – I tried)
